Carbonated drinks and the ideal sanitary pumping solution

It is one of the most popular commercial drinks of our time, known as soda or  spritzer. This drink, consist of various ingredients such as: carbon dioxide, sweeteners or sugars, flavorings, aromatic agents, juices, drinking water, among others. In Mexico, this drink can be considered as a must on each Mexican table for lunch or dinner time.

Background of the Spritzer / Soda Industry


The Spritzer / Soda industry has had a permanent evolution and development since its origin, with more than two centuries of history, satisfying consumers needs. The Spritzer / Soda, had its origin at the end of the 18th century, developed from the pharmaceutical industry, as a method to alleviate digestive problems, uric acid, among others. With a natural carbonated water base, it was combined with fruits and flavorings, sugars or sweeteners such as honey to give it a better flavor. At the end of the eighteenth century, the term "soda" was used for the first time to name the drink with sodium bicarbonate and carbon dioxide.

It was  until the year 1783 that a scientist named Jean Jacob Schweppe developed in his laboratory a flavored carbonate drink with quinine, which he called tonic. With this guideline was develop better quality drinks, it went from being a pharmaceutical drink to public one.

In the following decades, spritzer/ soda had a commercial boom. During this period,  cola soda, added vanilla and other ingredients to its flavor. It became an energy drink with a pleasant taste. Soon, it would become popular and some internationally recognized brands will be created. 

The spritzer / soda drink industry would develop new sales strategies to make the product more attractive to the consumer, through packaging, product distribution and supply chains. As well as the creation of new formulas that could be considered healthier or with better nutritional value.

Spritzer / soda drink consumption around the world

According to data from the El Statista site, only during the year 2021, a consumption of 224.5 liters per person was recorded in a year in the United States, which makes it the number one country in consumption of spritzer / soda. Recent data, places the Mexican Republic in fourth place, with about 141.31 liters per person per year. In second position is Japan, with 152.21 liters per capita, and the United Kingdom with 144.73 liters.


In Mexico, the annual per capita consumption is around 162 liters and normally the majority consumption occurs in men, young people and inhabitants of the south of the country. Between 1989 and 2006 the consumption of spritzer /soda per capita increased by 60%; the highest consumption is concentrated among the population between ages 12 to 39.

Soda or refreshing drinks are classified according to their composition and ingredients, among them are:
– Flavored soft drinks
– Refreshing extract drinks (cola is included here)
– Refreshing fruit juice drinks
– Refreshing drinks of disintegrated fruit
– Powdered preparations for preparing soft drinks

Carbonated Flavor Beverage Process


The process to elaborate and manufacture a spritzer /soda consists of different steps, among them are the following:

1. Water supply and treatment
Water is the main ingredients in a soda. It must be drinkable to begin to be used in the treatment of soda /spritzer.

2. Preparation of the drink
Sugars or calorie-free sweeteners and other ingredients such as juice, vitamins, caffeine, minerals, aromas, among others, begin to be incorporated and mixed into previously treated water.

3. Gasification
If the Soda drink will have gas, carbon dioxide is added, which provides the bubbles and is also an excellent preservative for the drink. If the soda is flat, it undergoes a pasteurization heat treatment, before or after packaging, to maintain its properties.

4. Packaging 
Once the drink is mixed, it is placed and dispensed in another machine that will allow the corresponding containers to be filled. Finally, an inspection is made to ensure that the fill level is correct. 

5. Tempered
Carbonated beverages are tempered to avoid condensation. Drinks also undergo a tempering process after pasteurization.

6. Labeling, Storage and Distribution.
The process continues, labeling the containers according to the brand and the contents, for their subsequent storage, packaging and transport to the distribution centers, and finally to the hands of the consumer.
